Sweet but Light



I have made this recipe a number of times and it has always had comments. I am a MASSIVE fan of cheesecake and even though I appreciate the richness - I have met many who don't like how heavy cheesecake usually is. This recipe is great because it is light and fluffy in texture but still retains that delicious cheesecake taste.
Although it may be tempting to dismiss the added strawberry step on the recipe - it is definitley worth the extra effort....tips it over the edge from a good dish to a show stopper!!!! YUMMMMMM!!!
