Last week was roasted pumpkin and that was glorious!
This week was roasted tomato soup. It actually fell on Tuesday this week cause we had leftovers to use up and that seemed wise ;) sometimes you gotta go with the flow!
In two steps, this is the soup:
1. Roast 1 kg tomatoes, 1 onion, 3cloves of garlic in an oven tray. Add a chili and a capsicum on too if you like.
2. Purée in a blender or food processor with 1 can of canelini or butter beans, 1 Tablespoon of tomato paste and some salt and pepper to taste.
Serve warm with a sprinkle of Parmesan, fresh herbs and some hot buttery toast (omit toast if you are being 'good').
So simple and equally as delicious!
